Whisks are designed to mix and beat ingredients vigorously, with multiple wires creating many disturbances at once. By lifting viscous liquids as you beat, Whisks introduce air into the mixture, thickening sauces and improving texture. Stainless Steel Whisks give the best results, but they are very abrasive and may damage non-stick cookware - even surfaces rated as metal utensil safe. Either whisk ingredients in a bowl before cooking them, or use a Nylon Whisk for whisking in the pan.
